Almond Milk

I really encourage you to try this home-made milk.  You'll be amazed!!  It's delicious, affordable and quick-to-make and you know exactly what's in it because you made it!!  It can actually be made with *any* nut or seed.  Almond is a good choice as it' is alkalising and has a pleasant taste.  Hazelnuts or walnuts are other favourites of mine.  Drink this milk as it is, pour over cereal or use as a base for smoothies, chocolate milk or raw vegan ice-cream.  I also use it for cooking in things like pancakes and hot chocolates so why not experiment and let me know how you get on!!  If I want to drink it immediately, I'll substitute some of the water for ice.


1/2 cup almonds (ideally soaked in water for 8-12 hours)

4 cups water


*Optional* ingredients to add:

1 tablespoon raw honey or organic maple/date syrup 

1/4 teaspoon cinnamon and/or vanilla

1 teaspoon lecithin


1.  Soak nuts in water for 8-12 hours or overnight, then discard soak water, rinse and drain.

2.  Blend with water and remaining ingredients on high speed until fully broken down.

3.  Strain through fine mesh sieve, muslin or nut milk bag.    

4.  Transfer into jug or jar with lid and store in fridge.  Keeps for around 3 days.
